Members Only Program: Sops! The Pilgrims' Beloved Comfort Carb
Admit it, your favorite part of French Onion Soup is the slice of toasted bread soft and warm with flavorful broth. The Pilgrims shared your love of a Comfort Carb. They savored their sops -- toasted or grilled bread dipped in wine or soaking up the juices or gravies of a roast, boiled fowl, or pottage.
"Serve your broth with meat upon sippets" advised the writer of the The Good Housewife's Jewel (1596).
In the Tragicomedy of Calisto & Melibea (1499), one of
the characters, frustrated by his troubled love life says, "With toast
in wine by the fire, I could sit with two dozen sops the colic to
quell!"
There's no finger food more fun, satisfying and luxuriant in calories
than sops. Dr. Fred Dunford PhD (Guest Experience Associate — Horticulture Lead) and Kathy Rudder (Curator of Multisensory Experience)
will take you from planting to platter — exploring the origin
of sops, the plants grown for ingredients, and how sops were part
17th-century life and culture.
